Every monsoon, tender bamboo hearts emerge with the season's first new growth. In Karnataka, they can be sustainably harvested only once a year, making this cherished traditional delicacy available for just a short time before it disappears until the next monsoon.
Our Once a Year Bamboo Heart Stew celebrates this rare seasonal harvest. Tender bamboo hearts are slow-cooked with five nourishing lentils—toor, avare, moong whole, black chhana,chickpeas, black-eyed peas, peanuts and chana dal—along with five fresh vegetables, five kind of wholesome greens(chilkuri, dantu, amaranth, hanne leaves, kanne leaves), vegetables: Potato, brinjal, ridge gourd, snake gourd, chow chow, beans
creamy coconut milk and freshly ground spices.
Prepared without a drop of oil, this hearty stew is naturally rich in fibre, plant protein and wholesome goodness. Light, comforting and deeply satisfying, it's a complete meal when enjoyed with hot rice or fresh chapatis.
