Most bagels labelled whole wheat or whole grain are still built on refined flour, with whole grain added back in small amounts. Ours take a very different path. These bagels are made with 100% whole, unrefined wheat—nothing stripped away, nothing reconstituted.
True to New York tradition, the dough is slow-fermented, water-boiled, and then baked to achieve a deep chew and full flavour. We use no lye for artificial shine and no chemicals of any kind—only time, technique, and integrity. The result is a bagel that’s hearty, honest, and uncompromisingly whole.
